Description

The Les Peyrouses cuvée is made from 100% Syrah grown in a parcel on the flats just outside of the Cornas AOC boundary. The soils here are alluvial sand and clay topped with limestone galets (large, round river stones). Vinification is done the same all Guillaume’s wines. Spontaneous, whole-cluster fermentation is followed by 12 months aging in large, neutral foudres. Belying its humble appellation, the Les Peyrouses is a seriously endowed wine of depth and structure, so much so that Guillaume typically presents it after his Cornas bottlings in his tastings.
