Description

Pillot is a 24-acre family estate spread out over dozens of small parcels throughout some of the the best villages in Burgundy. Day-to day running of the estate about ten years ago passed from Jean Pillot to his son Jean-Marc, and while change has not been overwhelming, Jean-Marc is modernizing the domaine a bit, building a new cellar and using a bit more new oak than his father did. Pillot’s wines are fermented in oak barrel, but less than 25% of the wood is new, so the oak flavor present in the wine is subtle. A medium- to full-bodied white, this is a fleshy but precise wine with lively acids, chalky structure, and a saline finish.
