Description
Elisabetta Fagiuoli produces three distinct Vernaccia wines. The same bunches, depending upon how they are fermented, will yield different structures and flavors, making for different wines that do share a common identity. Fiore is essentially Elisabetta’s Vernaccia sashimi. It is produced from the free-run must, which expresses the terrific elegance and finesse of the grape. The must flows naturally from the grapes that break because of the pressure of those above them in the press. It ferments in stainless steel tanks and ages long on the lees to gain roundness and persistence. The ‘Fiore’ is aged in bottlee.
