Privateer Distillery, located in Ipswich, Massachusetts, was founded by Andrew Cabot, a descendant of a Revolutionary War-era privateer of the same name. Inspired by his ancestor's legacy and a passion for crafting high-quality spirits, Cabot established the distillery with a commitment to traditional methods and transparency. Privateer focuses on producing unadulterated rums, emphasizing fermentation, distillation, aging, and bottling processes that highlight the purity of their ingredients. Their shelf lineup includes offerings like New England White Rum, New England Reserve Rum, and Queen’s Share, each reflecting the distillery's dedication to quality and authenticity.

Gordon’s Single Barrel (Single Barrel Release #2): The nose starts with a bouquet of vanilla bean slowly turning into caramel, toffee and nutmeg with bright pineapple and golden raisin undertones encompassed with warm baking spices. With a sip more baking spices come to the fore including cardamom, clove and black pepper, the golden raisin returns paired with luscious tropical fruits, including mango. To close you get vanilla sweetness into a long and oaky finish.

A standout feature of Privateer's portfolio is the "Distiller's Drawer" series, inspired by a Caribbean distiller who kept his finest creations in his desk drawer. This series showcases unique, single-cask expressions that highlight the distillery's innovation and craftsmanship, and we’re down to our last bottles of these one-off releases.

Echelon (Release #130): This rum is crafted from Queen’s Share distillate, produced by redistilling the "seconds" to extract remaining hearts. Aged for seven years in a used American oak cask, it offers a rich and evolving profile. Tasting notes include floral elements like lavender and elderflower, fruits such as apple and apricot, and spices like nutmeg and cinnamon. The palate balances sweet and savory with vanilla, caramel, and earthy spices.

Fulcrum (Release #131): This is Privateer’s first seven-year single barrel release matured in new American oak. Made from Grade A molasses and distilled in pot and column stills, Fulcrum emphasizes balance between distillate, climate, and oak. While specific tasting notes are not detailed, the use of new oak suggests a profile rich in vanilla, spice, and oak-derived flavors.

Convergence (Release #132): Also a Queen’s Share distillate, Convergence is aged in an ex-bourbon cask, highlighting the influence of whiskey barrels on rum. This cane-based rum, distilled using pot and column stills, is bottled at 59.6% ABV. The ex-bourbon cask aging imparts nuanced flavors, though specific tasting notes are not provided.
