On July 16th, in honor of the enduring alliance between France and the United States and the maritime celebration of Sail Boston, an extraordinary evening unfolds where elegance, history, and culinary artistry converge in celebration. This exclusive five-course champagne-paired dinner by the Inn at Hasting Park's Chef Cory Williams offers a refined journey through flavor and heritage, thoughtfully composed to honor centuries of shared ideals, craftsmanship, and cultural exchange between two nations bound by legacy and liberty. Set against an atmosphere of understated luxury and timeless sophistication, each course is designed as a dialogue between cuisine and champagne, where seasonal compositions meet exceptional pairings from Billecart-Salmon, creating a seamless expression of modern fine dining rooted in tradition.
At the heart of the evening is the distinguished 2018 Billecart-Salmon 250th Anniversary Cuvée—a rare Brut created exclusively for the U.S. market in anticipation of America’s 250th Independence anniversary (1776–2026). Crafted from the Maison’s 200th harvest, this collector’s champagne embodies precision, legacy, and the quiet power of tradition, setting the tone for a night of reverence and refinement. Together with Chef Williams’ meticulously composed five courses, the experience becomes a luminous toast to heritage, craftsmanship, and the shared waters that have long connected France and America—celebrating Sail Boston, where history, hospitality, and celebration meet at the highest level.
A boutique Champagne House, whose effervescent cuvees are favored among sommeliers and wine critics around the world, Billecart-Salmon is truly a champagne brand to know. Tucked away on the streets of Mareuil-sur-Ay, away from the grandeur of Champagne's other luxurious Houses, Billecart-Salmon is defined by its signature style, which consistently favors finesse and delicacy over boldness and power. The story of this historic, family owned and operated house begins in 1818, with the marriage of Nicolas François Billecart and Elizabeth Salmon, both of whom came from a winemaking background. Today the House is run by Mathieu Roland-Billecart, who represents the 7th generation of the family, with the support of Jean, Francois and Antoine Roland-Billecart.
