The Michel family has been farming and making wine in Chablis since 1850, and somewhere along the way they made a radical decision: stop hiding great fruit behind oak barrels. Decades before "minimal intervention" became a fashionable buzzword, Louis Michel & Fils moved entirely to stainless steel fermentation and aging. Their reasoning was simple. If you've got one of the world's greatest terroirs, why cover it up with artificial woody flavors? The result is a style of Chablis that is laser-focused, pure, and honest.

The vineyards sit on ancient Kimmeridgian soils packed with limestone, marl, and fossilized oyster shells dating back 150 million years. It's the kind of dirt wine geeks get emotional about. Cold winters, frost threats, hot summers, and dramatic temperature swings make life difficult for growers, but they also create the tension, freshness, and minerality that make Chablis unlike anywhere else on earth.

The family's vines average 45 years of age and are planted on some of the original slopes cultivated by Cistercian monks nearly a thousand years ago. In the vineyard, the philosophy is straightforward: great wine is grown, not manufactured. Sustainable farming practices, low yields, careful canopy management, and harvesting only at optimal ripeness ensure the fruit arrives at the winery ready to speak for itself.

Then the cellar team does the hardest thing in modern winemaking: they mostly stay out of the way. Natural yeasts drive fermentation, additions are kept to a minimum, and stainless steel preserves every ounce of freshness and precision. Nothing is added to make the wine taste like anything other than Chablis. The 2024 vintage captures everything fans love about Chablis: vibrant citrus, green apple, crushed stone minerality, bright acidity, and a clean, mouthwatering finish.

Michel’s 2024 Chablis villages had also been bottled in September of 2025. The wine shows a beautiful blend of pure and perfectly ripe fruit and classic underlying minerality in this vintage, delivering a complex and beautifully expressive nose of pear, lime, chalky minerality, anise and a topnote of fruit blossoms. On the palate the wine is deep, full-bodied, zesty and complex, with a lovely core of fruit, fine soil undertow, a lovely spine of acidity and a long, complex and very nicely balanced finish. Good juice. 2026-2045+.
