Don't Look a Gift Horse in the Mouth. This is Chablis for under $30. And these days, that is becoming preciously hard to find.

The 2025 Christophe Patrice Chablis is all gunflint, lemon, lime, and crunchy green apples. It is steely, bright, mineral-driven and refreshing. In other words, it is everything Chablis is supposed to be.

And there is something fun about this particular bottle. You don't know Christophe Patrice. I didn't either. In fact, there isn't much to know. Christophe Patrice is a small farmer, and until now, he has had virtually no presence in the American market. There is barely a web presence to speak of. No elaborate estate history. No glossy marketing campaign. No famous critic telling you that you've been missing out. Just a farmer in Chablis making really good Chablis.

I love bringing wines like this into the store. Think of this as a debutante ball; a coming-out party for a previously hidden gem. This is the moment when we get to introduce Christophe Patrice to the world and let the wine speak for itself. It says ‘Chablis’.

Not Chardonnay pretending to be Chablis. Not heavily oaked Chardonnay with a Chablis label. Not a soft, tropical interpretation of the region. This is the classic stuff: cold stone, citrus, green apple, a little struck-match gunflint character and that mouthwatering, almost crunchy acidity that makes you immediately want another sip.

The 2025 vintage is particularly charming because there is plenty of fruit here, but the wine hasn't lost that unmistakable Chablis snap. It is clean, focused and wonderfully uncomplicated. You can put it on the dinner table with oysters, shellfish, goat cheese, roast chicken or a plate of simply prepared fish—or you can drink it standing around the kitchen while dinner is being figured out.

And then there is the price, under $30. I honestly don't know how many more times we're going to be able to say that about real Chablis. The category has become increasingly expensive, and finding a bottle that delivers this much typicity at this price is getting harder every year.

So consider this your invitation to the debutante ball.
