Bright and Quaffable, Gaillac Blanc’s Bubbles Delight

This is the most refreshing white I've had in weeks. Let’s get the party started.

Calling all Txakoli lovers, and anyone who likes a mineral-driven, low-alcohol, slightly spritzy wine to get you through the doldrums of summer. Get ready to spice up a bland Wednesday afternoon. Set aside your hard seltzer and drink some real wine instead. Cheaper per drink than canned cocktails and with no sugar, this slightly effervescent version of grown-up Fresca is a grown-up solution to the dog days of summer.

The wine is the 2025 Maison Labastide Gaillac Blanc “Perle,” from the often-overlooked region of Gaillac in southwest France. “Perle” refers to the delicate natural sparkle in the wine. Don't think of Champagne. Don't even think of Prosecco. Think of the lightest possible touch of fizz—a gentle lift that brightens the fruit and amplifies the wine's already electric freshness.

In the glass, you'll find bright citrus, green apple, lime zest, and hints of white flowers, all wrapped around a core of stony minerality. The modest alcohol keeps things light on their feet, while the crisp acidity practically demands another sip. It's the kind of wine that disappears faster than you intended, especially when served ice-cold on a humid evening.

It works as an aperitif, a porch pounder, a poolside companion, or alongside just about anything coming off the grill. And before anyone asks: yes, it's perfectly fine to put ice in this wine. There, I said it. On a ninety-degree afternoon, a couple cubes in the glass isn't a crime, it's common sense. In fact, one of my favorite ways to enjoy it is as a simple summer spritz. Fill a wine glass with ice, add a splash of your favorite aperitivo-style liqueur, pour in a healthy serving of Perle, and finish with a splash of soda water. Beautiful in the glass, lower in alcohol than most cocktails, and exactly the sort of thing that disappears during a long afternoon with friends.

At these prices, this is a clear case-buy wine. Not because it needs aging. Not because it's rare. Quite the opposite. You and your best friends need it in your lives on a weekly basis for the next three months. The bottle you open on Tuesday because Tuesday happened. The bottle you bring to the beach, the cookout, the picnic, the boat, or the neighbor's backyard.

If you've been reaching for canned cocktails, hard seltzers, or whatever new beverage trend has invaded the cooler aisle, do yourself a favor and grab a case of this instead. It's more delicious, more interesting, and frankly more satisfying.

Drink up, my friends, and celebrate summer.
