Few domaines in the Côte d’Or can match the legacy of Domaine Pavelot. With more than 15 generations of family history and 15 hectares of vines, they are among the largest and most important landholders in Savigny-lès-Beaune. This depth of experience and vineyard holdings gives them a unique ability to express the nuances of the village, and in the newly arrived 2023 vintage, they have delivered a set of wines that show Savigny at its very best. The vintage itself is one of the most exciting in recent memory. 2023 gave wines of purity, freshness, and precision, with a natural balance that highlights both the elegance of Savigny and the depth of Pavelot’s terroirs. These are wines with lifted aromatics, fine-grained tannins, and a seamless texture—crafted for those who value Burgundy that is both authentic and refined. We are pleased to offer a full range of wines from this superb release, including both village-level and a remarkable set of Premier Crus:
Savigny-lès-Beaune Village – a benchmark introduction to the Pavelot style, supple and aromatic.
Savigny 1er Cru Aux Gravains – structured, mineral, and built for the cellar.
Savigny 1er Cru La Dominode – the flagship, with remarkable depth and longevity.
Savigny 1er Cru Les Guettes – graceful, floral, and utterly charming.
Savigny 1er Cru Les Serpentières – energetic and precise, with lifted red fruit.

“An earthier mix is composed by notes of red and dark currant, violet and humus-tinged earth. The succulent and more voluminous flavors possess a nicely refined mouthfeel that contrasts mildly with the youthfully austere and firmer finale. This too should benefit from several years of forbearance.”

“This manages to be at once quite ripe yet cool and airy with its liqueur-like aromas of poached plum, earth and kirsch. The exceptionally rich flavors possess a suave, even lavish, mouthfeel while delivering good if not truly special length on the stony finale. In the context of what is typical for the Pavelot Gravains, this is quite plump if not actually fat and a wine that will drink earlier than it usually does.”

“Here too the nose is ripe to the point of being liqueur-like with a similar note of kirsch on the cassis and violet scents. The super-suave, round and highly seductive flavors possess good size, weight and power but not the punch it usually does. To be sure, this is perfectly good, it's just not as distinguished as I'm used to seeing.”

“This is distinctly earth as the soil tones are readily apparent on the similar nose of poached plum and black cherry. The succulent but solidly punchy mineral-driven flavors possess fine volume and excellent length on the noticeably firmer, balanced and built-to-age finale. This is very good but like all competent examples of Guettes, it's going to need at least moderate patience.”
