I’ve been following these guys for quite some time, at least since the 2012 blew up as the highest rated Oregon Pinot Noir ever made to that time, and made WS top ten wines of the year. I’d argue that the wine has only gotten better over time as the team continues to learn more about their vineyard block by block and how to treat it.

Sashi Moorman and Rajat Parr started this project some time ago, and Sashi is still the head wine maker. At the heart of it all is Seven Springs Vineyard, a legendary site in the Eola-Amity Hills first planted in 1984. Perched on volcanic soils with constant cooling winds from the Van Duzer Corridor, Seven Springs produces wines of structure, tension, and incredible site expression.

The team at ELV farms the vineyard biodynamically, picks early for freshness, and uses low-intervention techniques in the cellar. Native yeast, whole-cluster fermentation, minimal new oak—everything here is about purity, texture, and restraint.

Here’s the biggest selling point. Yes, the wines are excellent. There may be no better Chardonnay or Pinot Noir made in Oregon. And here, because we asked very nicely, we have a significant price decrease. That’s the second time this week that I’m bringing out an inflation buster. Previously offered at some 15-20% higher in price, think of this as a Christmas in July present. Please take advantage of this, we’ve got plenty! But this price will not stick around for very long.

Light butter and baking spice nuances in the aroma lead to vivid, juicy and crisp lemon, green apple and vanilla bean flavors that expand on the palate and linger on the finish. While it’s the entry-level Evening Land chardonnay, it should age well mid-term.
