Domaine Chavet La Côte is exactly the kind of bottle our Fine Wine Team loves to uncover. Bright lemon and lime, subtle flinty minerality and a crisp, beautifully fresh finish make this a seriously food-friendly Sauvignon and one of our favorite alternatives to Sancerre.
The Chavet family has been making wine in Menetou-Salon since 1710, and the region’s fossil-rich Kimmeridgian limestone is affectionately known as “oreille de poule,” or “hen’s ear.”
Over the years, our team’s visits to the Loire have brought us back to one simple pairing: warm Crottin de Chavignol, fresh greens, walnuts and a bright vinaigrette. If you can’t find Crottin, Vermont Creamery makes a great local alternative called Bijou, If neither can be found, a roll of your favorite chèvre on toasted baguette is almost as delicious with this salad.
Warm Crottin Salad
Toast baguette slices topped with halved Crottin at 400°F for 5–7 minutes. Toss greens and toasted walnuts with olive oil, vinegar, Dijon, salt and pepper. Top with the warm cheese toasts and finish with a little honey. If you prefer exact measurements, we LOVE David Lebovitz’s French Vinaigrette.
