At just modest alcohol levels, this is a wine built for warm weather. Bone dry, crisp, and beautifully balanced, it delivers notes of lemon zest, grapefruit, fresh-cut herbs, and wet stone without ever becoming heavy or tiring. Every sip feels cleaner and more refreshing than the last.

Domaine Pajot has accomplished exactly that here. The 2025 Domaine Pajot Gascogne Blanc is not the most serious wine in the cellar, but during August, it just might be the most useful.
