Special Corns and Special Barrels!
Closing out our April bourbon sale, we wanted to feature our sweeter bourbons for our dessert-hounds out there. We recently hosted Christian Huber of Huber Farms and Starlight Distillery, and he took us through a grand tour of our single barrels and their special release offerings. Our last two Indiana bourbons have targeted the heirloom White Dent and Blue corn strains produced at Huber Farms to understand and appreciate the extent to which grains impart unique flavor profiles into whiskies. In 2023 we released our White Dent and late in 2024 introduced our Blue Corn offerings. The white is a bold Indiana bourbon with notes of maple syrup, smoke, and sweet corn, followed by a spicy palate of black pepper and cinnamon roll, finishing with oak and leather. The blue is a younger flavor bomb featuring smoky, peppery notes on the nose with hints of grape and vanilla. The blue corn brings a rich blend of baking spices, tobacco, and sour cherry, making it an ideal fall sipper with a long, spicy finish. You can’t get anymore “grain to glass” than Huber Farms. They grow the corn, produce the mash, brew the beer, distill and bottle the spirits all on site!
For those feeling more adventurous in their sweet pursuits, we’ve also wandered into finished territory from time to time. Our first Starlight Honey from 2024 sold in a matter of weeks, so we knew we wanted a second crack and a full cask this time around. Our 2025 honey cask is delicate and sweet with aromas of honey and vanilla. The palate delivers honey, butterscotch, brown sugar, and light tobacco, evolving into a smooth, complex finish with oak, rye, and more vanilla. Finally, Angel’s Envy brings the luscious fruity notes from its port barrel finishing. A luxurious bourbon with smoked maple and dark cherries on the nose, it leads to rich flavors of dark fruit cobbler, cacao, and a velvety mouthfeel. The long, complex finish of chocolate, cherries, and tobacco makes it comparable to top-tier cask strength releases.
