The agave is grown in the mountains in the highest point in the Blue Weber agave growing regions, and slowly roasted and the agave is macerated intact with fiber and all, rather than crushing and extracting the just the juice to ferment. To bring it to 80 proof after distillation, they use 50% captured rainwater and 50% mineral spring water.
